Since 2010 we have engaged our community of customers through the art of whole animal butchery and have educated and trained enthusiastic class participants in the basics of butchery, sausage making, and curing meats.
It is now time to take this education to the next level with the release of PSM Advanced Butchery.
This class is designed for chefs and customers with basic kitchen skills who want to expand their knowledge of pork and beef butchering and have a greater hands-on experience.
The PSM Advanced Butchery class will be small, limited to 6 students, and will explore the proper techniques for breaking down primals and subprimals, the art of trussing meat, and the intricacies of meat grinding. Class participants will receive a PSM Butcher hat, boning knife, personalized certificate of completion, and a selection of the meat they processed during class.
Due to the hands-on nature of this class, participants should be comfortable using a knife; capable of lifting up to 50 lbs; wear closed-toe, non-slip shoes; and be prepared to stand for several hours.
This class runs from 10 - 1 and includes a lunch of meat roasted on the Big Green Egg, Southern vegetables, and beverages. $225/ Person. Classes are held at Pine Street Market. Refunds are not available for missed classes.
